Gryos Kebab

In a Pitta with Salad

Lots of ingredients but well worth it! Time to raid the dried herb parlour!

In a bowl of 4 cubed chicken breasts add 4tbsp of olive oil, 2tsp dried oregano, 1tsp dried mint, 1tsp ground cumin, 1/2tsp coriander, 1tsp sweet paprika, 1/4tsp cinnamon, zest and juice 1 lemon, 4 cloves crushed garlic, 1tsp QC,1/2tsp of salt & pepper.

Allow to marinade for 3hrs but if you can up to 48 is best. If it’s not bbq weather then a skillet pan on the hob will do!

Serve in a warm pitta with a shop bought or homemade tzatziki, fries and salad.  A healthy alternative to your usual kebab.

Thai Red Curry

Prawn & Mushroom

In a deep based frying pan add 1tbsp of coconut milk along with 60g of a good quality Red Thai curry paste and mix together until the aromas are released, about 3mins.

Add some quartered mushrooms to the pan, stirring to coat the mushrooms with the paste.

Add 1tsp fish sauce, 1tbsp lime juice, 1tsp palm sugar and the rest of your can of coconut milk. Bring to a simmer and add your raw prawns, simmer for about 5mins or until the prawns are cooked through. Add a sprig of chopped spring onion for the last minute, keep the green part for garnish. Serve with boiled or sticky rice.

Slow Beef Brisket

With Red Onion & Chorizo

In a small bowl make a rub using 2tbsp olive oil, 2tsp dried mixed herbs and 1tsp of black pepper. Smear 800g of beef brisket with the rub. Heat some butter in an ovenproof casserole pan/pot and sear the brisket all over.

Remove the brisket and fry one chopped red onion in the pan for 5mins along with 1tsp QC. In a jug of 300ml of water mix 3tbsp tomato purée and 1tbsp of garlic purée and add to the onion. Place the brisket back into the pan and add 500ml of tomato passata, bring to a simmer then lid on and place in the oven at 160fan for 3.5hrs. Add chunks of chorizo then back in the oven for at least another hour or as long as you can. Pull apart and serve on bread rolls.

Salmon Fillet

Marinaded in Quirki Chilli

One of the simplest way to use your QC.

Spread 1/2tsp of QC over the fillet of salmon, cover and pop into the fridge to marinade.

Being oil based QC will filter through the salmon so the longer you can marinade it for the better. All the same if you don’t have time or forget to marinade spreading QC on and cooking straight away is still very tasty.

Steam or pan fry your salmon.

Butternut Squash

Roasted for Soup or Lasagna

A very flavoursome way of jazzing up your butternut squash.

Carefully skin your squash and cut into 1cm discs. Rub the squash with olive oil and QC. Roast in the oven at 170fan for 45mins.

Great with salad or whizz it up for a roast butternut squash soup. See the lasagna recipe for another suggestion.

BBQ Kebabs

Chicken, Prawn & Halloumi

Chicken: cut chicken breasts into 1” cubes and put them in a zippy bag with 2tbsp of teriyaki sauce, 1tbsp of garlic purée, 1tsp of QC and 2tbsp of lemon juice..

Prawns: put grey/raw prawns into a zippy bag and add 2tbsp of lime juice, 1tbsp of garlic purée, 1 strip of spring onion finely chopped and 1tsp of QC.

Halloumi: cut halloumi into 2cm strips and put them into a zippy bag. Add 2tbsp of sun dried tomato purée, ground pepper and 1tsp of QC.

Marinade all three bags for 2hrs before skewering.
