Using Ciabatta Bread

One of my all time favourite foods.

Take a couple of handfuls of ripe tomatoes, wash them, remove their cores and carefully squeeze out the seeds. Chop the toms to your preferred size put them into a bowl add a good glug of olive oil & white wine vinegar, QC & season.

The ciabatta bread is best sliced 2cm thick and toasted on a griddle. After lightly rub with garlic, drizzle with olive oil, season and top with the mix
