Start by cleaning and rubbing down the rind you have bought from your butchers, wipe down with kitchen paper. Heat the oven to 180c.
Rub the rind with salt and leave for 30mins, cut into 2cm strips smear with QC and place on a rack or a baking tray. Into the oven for 20-25mins
Alternatively cook the salted rind as above but toss in some QC for the last five mins.
