Pancetta Spaghetti
With Tomatoes and Basil
Quick, simple, fresh, flavoursome food.
Whilst the pasta is cooking, half the toms and start to dry fry the pancetta. Put a table spoon of tomato purée in a cup and loosen with water, 60ml or so. Once the pancetta starts to colour add the purée, stir for a minute , few twists black pepper, add 1/2tsp QC, toms (2mins), stir through the drained spaghetti.
Sprinkle with basil and Parmesan cheese.
